Corn Relish goes great in a Buddha bowl, in tacos, or as a side dish of its own. It brings a fresh, crunchy flavor to your meal.
Ingredient:
1/2 cup chopped cilantro
1/3 cup red onions finely diced
1 can or 2 shucked ears of corn
1 pinch of salt
Lets get cooking
1. Add the shucked or can of corn to a bowl and squeeze the juice of one lemon or lime into the corn. You can cook the corn quickly in a saute pan on high heat until it gets slightly charred if you like, which will add to the complexity of flavor in the relish.
2. Add a pinch of salt, along with the chopped cilantro and the red onion.
3. Let it sit or you can prepare this ahead overnight.
